Valentine’s Thumbprint Cookies

Valentine’s is such a sweet Holiday.. no pun intended ;) … it is a day to celebrate LOVE! We often get carried away with the day to day tasks and general busyness of life. Valentine’s is a great reminder to take a little extra time and shower our nearest and dearest with love. This year I decided to make Valentine’s Heart Thumbprint Cookies. These lovely Jam Thumbprint cookies are soft, buttery and are a great addition to your holiday baking list. They are a classic cookie everyone loves.

I found these lovely Thumbprint Cookie Cutters at Williams Sonoma. The patterns are so elegant and sweet. I used strawberry jam in the heart cookies so they looked red for Valentine’s Day. I also used the other prints and did a combo of strawberry and wild blueberry jam, which is our favorite over here! These cookies would be delicious with any kind of jam like raspberry, blackberry, apricot.. Yum! Are you getting hungry yet? ;) These cookies are very simple to make. My husband said they are his new favorite!

First, I line my cookie sheets with a piece of parchment paper. I get mine at Whole foods or the local grocery store. Amazon sells them as well. They’re sold in sizes that fit a 12×16 cookie sheet perfectly and enable to cookies to bake well without sticking- and no mess from spraying oil on the cookie sheets!

When it comes to rolling out the dough, be sure to flour the surface so the dough doesn’t stick to the counter. Keep working with the dough as it can get a bit crumbly like sugar cookies do. Once it is rolled out about 1/4 inch thick, start cookie cutting!

RECIPE

Ingredients

  • 1 cup butter 2 sticks, at room temperature

  • 2/3 cup granulated sugar

  • 2 egg yolks

  • 1 tsp. vanilla extract

  • 2 cups all-purpose flour

  • 1/2 tsp. salt

  • Jam

Instructions

  • Line a cookie sheet with parchment paper.

  • Beat together butter and sugar on medium-high speed until light and fluffy, about 2 to 3 minutes. Beat in egg yolks and vanilla extract.

  • Add flour and salt and mix until incorporated and dough comes together in a ball.

  • Form dough into round disc, dust with flour, wrap in cling wrap and chill in fridge for 30 minutes.

  • Preheat oven to 375 degrees F. while rolling out dough and cutting cookies.

  • Sprinkle countertop and rolling pin with flour to ensure the dough doesn’t stick to surface. Roll out dough to 1/4 inch thick, cut out cookie shapes with cutters.

  • Bake cookies for 11 to 14 minutes, or until edges of cookies are lightly golden.

  • Remove cookie sheet from oven and cool on wire cooling rack. (Optional - Dust with powdered sugar when cooled)

Original recipe from Bread with a side of Butter. I modified recipe to make cutout cookies.
