Easter Egg Nest Cupcakes
Easter is a beautiful Holiday! It is a time where family gathers, children hunt for Easter eggs, delicious food is served at the feast we have to celebrate our Lord and Savior, rising from the grave who came to save us all from our sins. WOW what a loving God we have!
I am So excited to share this Easter egg nest cupcake recipe that I grew up making with my mother. It is so nostalgic and fun. We always had such fun family gatherings growing up with my grandparents, my dear aunts and uncles, and fav cousins! We made good food, played family football, and made Easter cupcakes! Such a joy!
This is a super easy recipe, so it won’t add too much work to the feast you are already preparing, yet it is a show stopper! I typically bake cakes and make my frosting from scratch. For this recipe I kept it really simple for times sake. I used classic Betty Crocker white cake and vanilla frosting. Feel free to use any cake you like. Some like Chocolate and strawberry is good too, yum! I got one bag of sweetened coconut flakes, green food coloring, and some pastel cupcake paper liners for pretty Easter colors. Most grocery stores sell these kinds. Coconut is my favorite cake flavor. I could eat coconut for days, so I get excited with this recipe.
Prepare the cupcakes according to the box. Line the cupcake tin with paper liners, fill them, and bake. While the cupcakes are baking, pour the bag of coconut into a bowl and add enough food coloring to the desired level of green color. I personally used 1/4 of a small bottle to get this color green. Stir until all flakes take the green color in.
Cool the cupcakes completely before frosting. After frosting the cupcakes spoon the coconut over top of the frosting, lightly pressing it into the frosting so it holds. It worked better for me to use my hands to top the cupcakes. After adding the “grass”, add the “eggs” for the “nest”. ;) I used chocolate M&Ms speckled eggs because they look like real eggs and are OH SO adorable. I did my best to turn the “M” logo under so it looked like a real egg. Growing up we used jelly beans, which are also a tasty option! So it is that simple! The hard part is trying not to eat all the M&M eggs before they get onto the cupcakes!
