Cinnamon Bars


Cinnamon bars! What a heavenly treat - like brownies but with cinnamon instead of chocolate, dense, moist and chewy. The best part is that they are super easy to make. These delightfully delicious cinnamon bars may be our new favorite dessert for holidays and all year round!

I love quick and easy recipes that impress. It is nice to be able to make something so simple that is so tasty! The kids always love helping and learning about measuring, and smelling the spices (Especially the vanilla mmm). Whisking brown sugar into the butter on the stove on a low flame is complete Zen lol!





Recipe

Ingredients

  • 2 cups all-purpose flour

  • 2 teaspoons ground cinnamon

  • 1 teaspoon baking powder

  • 1/4 teaspoon baking soda

  • 1/4 teaspoon salt

  • 2 cups packed brown sugar

  • 2/3 cup butter

  • 2 eggs

  • 2 teaspoons vanilla

    Topping:

    • 1/4 cup granulated sugar

    • 1 teaspoon ground cinnamon

    • 1 tablespoon butter - melted

    • Pinch Kosher salt

Directions

Begin by preheating your oven to 350 degrees F. Line a 9-inch square baking pan with parchment paper. Spray with baking spray and set aside.

  • In a large bowl, whisk together the flour, ground cinnamon, baking powder, baking soda, and salt. Set aside.

  • In a medium saucepan, add the butter and brown sugar. Cook and stir until the butter is melted and the mixture is smooth. Remove from the heat and allow to cool slightly. Stir in the eggs and vanilla extract.

  • Add this mixture to the flour mixture and stir until combined.

  • Spread the batter in the prepared baking pan. Bake for 24-28 minutes or until a toothpick inserted near the center comes out clean.

  • For the topping:

  • In a small bowl, mix together the granulated sugar, cinnamon, and pinch of kosher salt.

  • While the bars are still warm, brush them evenly with the melted butter, then sprinkle with the cinnamon-sugar mixture.

  • Allow to cool completely before slicing and serving.

  • Pack and store leftovers in an airtight container.
