Beach Family Photo Shoot and Homemade Chicken Noodle Soup

Hi everyone! Hope this month is bringing sweet things to you all. We had the most wonderful time recently with good friends on the beach. My friend Sarahelainephotography.com did photos for us. She does such a fantastic job!

I absolutely love the charm of Charleston, all the nooks and beautiful beaches. The beach is truly my happy place and I know many can say the same. We have done photos all over Charleston and it was the perfect season to do a beach shoot.

I thought I would share a simple post today of our family beach photos and a homemade chicken noodle soup recipe I created. This soup is amazing, super simple, and great for the whole family to enjoy. Cozy up with some soup on a rainy day, when you are sick, or anytime.. it is always a good time for classic chicken noodle soup. Going through family photos and looking at the beautiful faces of ones I love made for a sweet peaceful day.

The weather couldn’t have been better... Partly cloudy, 67 degrees and the wind on the beach was 3mph.. Literally all you can ask for on picture days! We really had a great time.

I thought I would add a nice chicken soup recipe because I made it today and it sounded like a fun post. I just throw some things together and kind of create my own recipes a lot of the time. I am always happy to share!

Bake chicken breasts in a little bit of olive oil at 350 degrees for 25 min - chicken won’t be all the way cooked but it will cook in the pot) - you can use rotisserie for faster option

Fill a large stock pot with chicken broth and water until close to the top (my fav is this Staub Dutch Oven for soups)

Start bringing to a boil while adding all other ingredients except the pasta. Once it is boiling reduce flame to a gentle to medium boil.

Add all ingredients except the pasta. When chicken is done, shred it with 2 forks and add it to the pot.

From start to finish it takes me an hour to cook so be sure to time it. When the soup has 10 to 15 minutes left to boil add the pasta. When it is done turn off burner and serve hot with crusty bread! Enjoy!

Recipe:

Ingredients

3 boneless chicken breasts

8-10oz fusilli pasta or egg noodles (about 1/2 - 3/4 bag)

8 cups of chicken broth (Plus water to fill pot)

3 Tbspn butter and drizzle olive oil

4 carrots peeled and sliced

4 celery stalks chopped

1 sweet onion chopped

3 cloves fresh garlic minced

1 tablespoon fresh thyme

Dried Herbs - Parsley, rubbed sage, dried thyme, celery salt (add to taste.. I just give a few shakes of each in the pot)

Salt to taste (be sure it is salty enough, no one cares for bland soup)

I get this Fusilli pasta at Whole foods. It cooks really well. We have an egg allergy so it is the perfect noodle for this soup.
