Bananalicious Banana Bread Recipe

Ingredients

  • 2 cups all purpose flour

  • 1 teaspoon baking soda

  • 1/4 teaspoon salt

  • 1/2 teaspoon cinnamon (Feel free to use 1 teaspoon)

  • 1/2 cup unsalted butter

  • 3/4 cup brown sugar (I use less about 1/2c)

  • 1 teaspoon vanilla extract

  • 2 large eggs

  • 2 1/3 cup mashed overripe bananas (about 5-6 bananas)

Instructions

  1. Preheat oven to 350ºF. Lightly grease and flour a 9"x 5" loaf pan. Set aside.

  2. In a large bowl, cream together the butter and brown sugar. Mix in the vanilla extract, eggs, and mashed bananas until well blended. 

  3. In a separate bowl, combine the flour, baking soda, salt, and cinnamon. Add this dry mix into the banana mixture and stir just until incorporated into the wet mix. DO NOT over mix or this will result in a dense bread. Add in the nuts (optional) (We prefer nut free) and mix until well distributed throughout the mix. 

  4. Pour the batter into the greased loaf pan. Bake for 60-65 minutes or until a toothpick inserted to the center of the loaf comes out clean. Let the bread cool in the loaf pan for 10 minutes before turning out onto a wire rack. Slice and serve! 

Recipe Notes

  • Omit the nuts if you do not like nuts. 

  • 2 1/3 cups of mashed bananas equals approximately 5-6 medium sized bananas.

  • Chocolate chips can be substituted for nuts or use a mix of both. 

  • Substitute butter with apple sauce, oil, sour cream, or yogurt. 

  • Make sure to use a 9" x 5" loaf pan. Too small a pan will cause the bread to brown on the outside before it cooks on the inside. If the inside is still slightly raw after the cook time, cover it with foil and bake for another 5-10 minutes.

There are more bananas used in this recipe than most. I am so happy it is made with brown sugar. I love the taste and flavor of the brown sugar and the notes of vanilla. Ahhh. This is a great recipe to bake with the kids. There is a fun job for everyone. We always love talking about the ingredients as we work and love to smell them.. especially the vanilla. This recipe has been passed around for some time it seems. I can see why.

Here is a fun tip I learned from a local chef when comes time to serve the banana bread. Cut a slice and set it in a warm pan or griddle with butter and sear it on each side. I even add some cinnamon to the butter. It is slightly crisp on the outside and soft and warm on the inside. Your taste buds will be dancing. I love to serve it with coffee or tea, maybe enjoy it while playing a favorite board game with the family. This banana bread makes for great gifts! This is sure to be a new staple in your recipe book. :)
