Banana Crumb Muffins

I love muffins… a lot! They are baked regularly around here. Breakfast cakes and coffee is a big thing in our house. Maybe it is because I am European. ;) These banana crumb muffins are sure to be a hit in your home! Every year we bake batches of these and deliver them to neighbors and our school teachers. People love getting home baked gifts, especially ones that taste good! These won’t disappoint.


These are pretty easy muffins to whip up. Of course the kids love to chef around here! Their little eyes full of wonder and joy knowing their work produces something so tasty makes our hearts happy!

In a large bowl, mix together 1 1/2 cups flour, baking soda, baking powder and salt. I chose to also add 1/4tsp cinnamon. In another bowl, beat together bananas, sugar, egg and melted butter. Stir the banana mixture into the flour mixture just until moistened. Spoon batter into prepared muffin cups.

Line a muffin tin with your favorite paper muffin cups.

In a small bowl, mix together brown sugar, 2 tablespoons flour and cinnamon. Cut in 1 tablespoon butter until mixture resembles coarse cornmeal. Sprinkle topping over muffins.

Bake at 375 degrees for 18-20 min. Cool, and ENJOY!

Banana Crumb Muffin Recipe

(Original recipe yields 10 servings)

Ingredients

  • 1 ½ cups all-purpose flour

  • 1 teaspoon baking soda

  • 1 teaspoon baking powder

  • ½ teaspoon salt

  • 3 medium bananas, mashed

  • ¾ cup white sugar

  • 1 egg, lightly beaten

  • ⅓ cup butter, melted

  • ⅓ cup packed brown sugar

  • 2 tablespoons all-purpose flour

  • ½ teaspoon ground cinnamon (1/4 tsp in dry mix, 1/4 tsp in crumb topping)

  • 1 tablespoon butter

  • Step 1

    Preheat oven to 375 degrees F (190 degrees C). Lightly grease 10 muffin cups, or line with muffin papers.

  • Step 2

    In a large bowl, mix together 1 1/2 cups flour, baking soda, baking powder, cinnamon and salt. In another bowl, beat together bananas, sugar, egg and melted butter. Stir the banana mixture into the flour mixture just until moistened. Spoon batter into prepared muffin cups.

  • Step 3

    In a small bowl, mix together brown sugar, 2 tablespoons flour and cinnamon. Cut in 1 tablespoon butter until mixture resembles coarse cornmeal. Sprinkle topping over muffins.

  • Step 4

    Bake in preheated oven for 18 to 20 minutes, until a toothpick inserted into center of a muffin comes out clean.
